Creamy Buffalo Chicken, Tomato, and Corn Pie

This is perhaps the most delicious thing you will ever put in your mouth, according to my wife, Bev, who after 15 years with me and the creation of numerous cookbooks is getting harder and harder to impress. So I take that as quite a compliment. One thing is for sure: this dinner pie isn’t for the faint of palate. The combination of blue cheese, buffalo wing sauce, ranch seasoning, and garlic makes for quite a bold statement, tempered beautifully by the chicken and vegetables. Summer is clearly the best season for making this pie, but it’s hearty and rich enough to serve in the dead of winter, too, using frozen corn kernels and the best long-distance tomatoes you can get your hands on.
